Food, glorious food...
Strips of breast of chicken, lightly cooked in chilli olive oil (just enough to moisten the pan) Slam down the lid... wait until it smells right. (all my cooking and baking follows the 'smells right' system!)
Then squeeze juice of one lemon in pan, add seasoning to taste and drizzle honey over the lot. Lid back on. Check heat not too high. Smells right? Great! Take off lid, turn up heat and stir until each chicken piece is coated in the resulting toffee-coloured sauce. (there won't be any sauce left by the time you've finished)
Serve with crisp green salad - I cut up some orange segments to go with the salad, but you can drain and toss in a can of mandarins, it tastes just as good :))
